Their dream became a reality when chefs Colby and Megan Garrelts opened bluestem in March of 2004. The Garrelts invite you into their home and share their passion on a plate. With Chefs Colby’s Progressive American Cuisine and Chefs Megan’s New Varieties of American Desserts, bluestem is dedicated to providing not only a meal, but a truly memorable experience. The dream was set in motion at a five-star, five-diamond restaurant in Chicago, when Colby Garrelts - a senior sous chef - met future wife and partner Megan Shultz. A little more than five years later, the Garrelts transformed their joint expertise into the fine dining restaurant that is a Kansas City original – bluestem. The restaurant perfectly blends Chef Colby’s contemporary cuisine with Chef Megan’s aptitude for American desserts. With general manager and wine director Jeremy Lamb’s extensive knowledge of pairing the perfect wine with any dish, bluestem epitomizes what every fine restaurant in Kansas City should strive for.
Since the restaurant’s opening in midtown Kansas City, bluestem has received local and national accolades for their invigorating marriage of progressive, American cuisine and stylish elegance.
